When a 5-Star Chef Decides to Open a Coffee Shop

If coffee is a religion, Zurich’s COFFEE (Grüngasse 4) is a house of worship – even though it’s closed on Sundays – and owner Thomas Leuenberger a high-priest.

His motto “Make Coffee Great Again” sounds somewhat familiar but in this case, something I would definitely vote for.

So typical when you walk into a café today: the frontal aromatic assault of spices, infusions, and other ingredients, which in my opinion, don’t even belong in coffee. Not to mention ridiculously long product names and combinations, which are barely pronounceable.

COFFEE is a purist’s dream and the menu board supports this: four articles to choose from.
Count them, 1-2-3-4! Two espressi and two filter coffee types. C’est tout!

When Thomas – a 5-star chef with years of experience in some of Switzerland’s best kitchens – decided to put his cooking career on-hold, for what he calls “time to re-generate and get inspired all over again”, he decided he wanted to make Zurich’s best coffee. And he’s been at it since September 2016.

COFFEE’S philosophy is very simple:

– Single-lot coffees (no blends)
– Only the best international coffee beans available
– 100% Arabica
– Slow roast at low temperatures

Never have I experienced so many nuances and variety of aromas in a coffee cup (tasted pure: no sugar, no milk). On the palate: elegance, balance, bright flavours, crisp, and pleasant.

In the beginning it was somewhat of an acquired taste but after the 2nd and 3rd sip I literally had to keep going back to taste and re-taste because I had never had coffee like this. Truly an experience.

COFFEE, definitely one reason to get up in the morning.
